Nessa profissão, temos que se manter em constante estudo. Quantas vezes eu estou com muito sono, querendo dormir, mas sempre tenho que ler algum artigo, páginas de livro, alguma matéria em alguma revista de gastronomia antes de dormir.</span></span></div><div class="MsoNormal" style="line-height: normal; margin: 0cm 0cm 0pt; text-align: justify;"><span style="font-size: 12pt;"><span style="font-family: Calibri;"><span style="mso-tab-count: 1;"> </span>Eu tenho uma verdadeira biblioteca em casa, mais de quatrocentos exemplares, assim dividido entre livros, revistas, dvds, apostilas. Principalmente em São Paulo, tais como, Fispal, Expovinis, Equipotel, Prazeres da Mesa Ao Vivo, entre tantas outras que acontecem no Brasil e no exterior. </span></span></div><div class="MsoNormal" style="line-height: normal; margin: 0cm 0cm 0pt; text-align: justify;"><span style="font-size: 12pt;"><span style="font-family: Calibri;"><span style="mso-tab-count: 1;"> </span>Se você está na faculdade, aproveite essa época para estagiar em vários restaurantes de várias modalidades, exemplo, cozinha industrial, cozinha vegetariana, cozinha internacional. Assim, você vai perceber se quer mesmo seguir essa área e aprender coisas diferentes que irá utilizar sempre.</span></span></div><div class="MsoNormal" style="line-height: normal; margin: 0cm 0cm 0pt; text-align: justify;"><span style="font-size: 12pt;"><span style="font-family: Calibri;"><span style="mso-tab-count: 1;"> </span>Conversar com pessoas do ramo também é ótimo para desenvolver idéias, receitas, projetos. Infelizmente alguns Chefes de Cozinha estão mais preocupados em se manter arrumados para as fotografias e gravações... Ou acham que se conversar com outras pessoas do ramo vão roubar as suas idéias. Ao invés desses Chefes se juntarem para fortalecer a gastronomia, prefere fazer o lado de Chefes estrelinhas. Hoje é mais fácil essa comunicação, pelos twitter, facebook, orkut, você encontra vários chefes que gostam de trocar idéias.</span></span></div><div class="MsoNormal" style="line-height: normal; margin: 0cm 0cm 0pt; text-align: justify;"><span style="font-size: 12pt;"><span style="font-family: Calibri;"><span style="mso-tab-count: 1;"> </span>Não adianta fazer a melhor faculdade de gastronomia, ou ter nascido em uma família que já possui restaurante (lógico que isso ajuda). Se você acha que sairá da faculdade Chefe de Cozinha está totalmente errado. Vão ter que lavar muitos fogões, coifas, panelas antes de pensar em usar o título de Chefe de Cozinha.</span></span></div><div class="MsoNormal" style="line-height: normal; margin: 0cm 0cm 0pt; text-align: justify;"><span style="font-size: 12pt;"><span style="font-family: Calibri;"><span style="mso-tab-count: 1;"> </span>Algo que me irrita são pessoas que não se formaram ainda na faculdade, não possuem experiência na área e se acham os Chefes de Cozinha!
